Breakfast Burritos

For my family, breakfast burritos have always been a classic growing up. They're relatively easy to make and save really well. Calling the ingredients list "simple" is an understatement. You'll soon be making these and having enough left over for the next handful of days, and they're great even up until the last should-have-been-yesterday reheat.

  1. Lay down a sheet of parchment paper in a large sheet and dump on those tater tots. Cook in oven for 30 min. at directed temp.
  2. While those are cooking in the oven, grab a very large skillet and cook the sausage on medium heat. You will cook these until they are no longer pink.
  3. Once you start to see some pink disappear from the sausage, beat the 10 eggs until smooth. (See the tips!)
  4. The tater tots should be done at about this time, so grab a large non-stick skillet and melt the butter in it, then pour in all 10 eggs into the non-stick skillet and scramble. Do not salt.
  5. Once the sausage and tots are done, mix them together, smashing the tots a little bit, in the very large skillet the sausage was cooking in — don't drain the liquid before mixing in the tots, as the tots (and later the eggs) will soak it up. Mix the eggs in once those are done, too.
  6. Wrap a serving of this mix into a burrito with your favourite toppings and enjoy!

Tips

After squeezing the sausage into the very large skillet, divide it into 5 sections roughly shaped like patties. This will help them cook a little more evenly. Once they have heated a little more, then begin smashing up the sausage fully.

You can beat the eggs either in a large bowl with an electric hand mixer, or you can throw them in a blender if you want them done even quicker and easier. I would not recommend beating all of these with just your hands, but if you've got FOREARMS AND WRISTS OF STEEEEEEL go ahead.

If you really don't like Teflon and other non-stick materials, you can cook the eggs in something else like a cast iron skillet ... however, this requires a certain amount of skill, so to make your life a hell of a lot easier I would not recommend cooking them like this. Just stick with the cancer pans, it'll be fineeeee!

If you don't want to get overwhelmed with handling too many things at once, you can turn off the oven and keep the tater tots in there for just a little bit once they're done cooking. They will continue to get crispy the longer you leave them in though, so pretty much as soon as the sausage is done cooking you want to get the tots out of the oven.

Recommendations

This meal is, in my heart, one of the unquestionable champions of adaptability. Some good additions to your burrito include cheese, salsa, small slices of bell peppers, meats from left-overs. A good cup of coffee is also nice. But honestly? Add whatever you want, get sillay with it!

You can bag this meal into plastic bags and take it with you when going camping!
