Cherry 7up Cake
This is a very easy to make cake, if you ever have a little too much soda on hand.

Ingredients
- Butter 1 1/2 c., softened
- Sugar 3 c.
- Eggs 5
- Flour 3 c.
- Lemon extract 2 tsp.
- 7up soda 3/4 c.
- Maraschino cherries 10 oz., drained & juice reserved

For the glaze:
- Powdered sugar 2 c.
- Lemon extract 1 tsp.
- Milk 3~4 tbsp.
Directions
- Preheat oven to 325° F. Generously butter a bundt pan, swirling about 1/2 c. of sugar inside of it, until evenly covered.
- Beat butter & sugar in a large mixing bowl for about 2 min. Add eggs, beating for another minute. Add flour gradually, beating until thoroughly mixed. Pour in extract & 7up. Fold in cherries.
- Spread batter into pan & bake for 1 1/2 hours. You can test to see if it's done afterwards by sticking a toothpick in it and pulling it out — if the toothpick does not come out cleanly when you retract it, the cake's not done yet.
- Allow to cool 10 min. in pan, then turn it onto a serving dish. Immediately pour on the cherry juice — the warmer and fresher a cake is, the better it will soak into the cake. Let cool completely.
- Mix ingredients for the glaze. Drizzle over cake. Top with extra cherries.
