Irish Beef

Traditionally made with root vegetables and lamb or mutton, but also commonly with beef. As in all traditional folk dishes, the exact recipe is not consistent from time to time, or place to place.

  1. Sear the pieces of meat, after seasoning with salt & pepper. Set aside these pieces. Saute onion, leek, & carrots.
  2. Stir in tomato paste and cook for one minute. Whisk in broth & herbs. Transfer to a crockpot & cook — either 4 hours on high, or 5~6 hours on low.
  3. Afterwards, whisk melted butter and flour in a small bowl. Add to crockpot & cook until thickened — this should take about 10 minutes.
  4. Don't forget to whisk in peas & parsley! :-) Let cook for a little bit longer, about 5 minutes.
  5. Serve with mashed potatoes & bread rolls.
