Mexican Rice
This meal, whether side dish or not, never fails to warm me up. Its perfect blend of earthy nuttiness and sweet tomato is so healing. And while the spicy factor naturally adds a bit of punch and clarity, the flavor of the peppers you decide to add balance perfectly between sweetness and rich tang. This one is a staple.

Ingredients
- Rice 1 c. uncooked
- Garlic 2 cloves, minced
- Water 2 c. cold
- Onion 1/2, diced
- Chicken bouillon 1 tbsp.
- Tomato sauce 1/4 c.
- Roma tomato 1, cut into 1/8
- Cumin 1 tsp.
- Serrano pepper 1, halved lengthwise. You can also use more, and / or de-seed them if desired.
- Olive oil 1 tbsp.
- Salt to taste

Directions
- Heat oil in a saucepan. Brown the rice. Add garlic.
- Add the remaining ingredients, bring to a boil. Cover and simmer on a lower heat for 15 min.
- Once done, move the pan away from heat and let it sit without removing the lid for another 20 min.
