"Crabussy" Robin's Pasta

A while ago when I was using Tumblr, I came across this post from Robin. I decided to make it, and before cooking I re-blogged the post with some tags. I loved it so much that I re-re-blogged it with new tags. His gleeful response to my joyous exclaimation ended up getting a little bit of traction, and the recipe quickly spread to many other people's Dashes. This meal will be forever in a warm place of my heart. "Hey, don't cry."

  1. In a medium-sized pot, boil water. Add in pasta of your choice. Grate parmesan cheese.
  2. Crush the garlic into a pot with a dollop of olive oil, and heat on medium. Stir the garlic frequently, until it is golden (it can burn easily).
  3. Immediately add the crushed tomatoes, balsamic vinegar, and brown sugar into the pot, pouring slowly to help minimize splatter. Mix well.
  4. Mix in small handfuls of fresh baby spinach until they are wilted.
  5. Add the grated parmesan and cooked noodles, mixing well.
  6. Enjoy!

Recommendations

Noodles come in all sorts of shapes and sizes, but for a saucy meal like this, I recommend using some kind of pasta that holds the sauce well: Orichette, penne, fusilli, &c ... Some noodles can taste better when one adds a little bit of salt to the water before adding in the pasta, depending on manufacturer and personal taste.

Although the original recipe calls for adding the parmesan earlier, adding the parmesan last will help it to not stick to the pan and mixing utensil as much.

If you want to add some meat to this dish, cook some italian sausage in a skillet while the noodles are boiling, and add the sausage into garlic's pan with the tomatoes (& pals).

Some spices / herbs you might be interested in adding: pepper, red pepper flakes, a light amount of basil.
